Every year in my Adobe Suite apps update, I have to change a bunch of menu item actions from the previous year to the current year's app. Is there a way to dynamically select the app with the appropriate year?

If you only have one copy of the applications installed, and if the bundle ID remains unchanged, then you should not need to do anything. Update Adobe, ensure the old version is deleted entirely from the harddisk, and the action should update to the new version.
If the old version remains, then the actions will, by default, continue referencing only the old version.
You can configure the popup menu to Match by Bundle ID, and then the actions will apply to any version, favoring the currently running version.
