I there a possibility to grab from a scanned file something like Date, Name/Company, invoice Number and customer number and rename the file scan_01.2020.01.20 with this credentials?

If you scan invoices and such to PDF you most likely want a PDF with text, for full-text searchability in Spotlight.

So, I would do the OCR via the scanning software (or some other PDF OCR software); this creates a text “layer” in the PDF. Then try to get that text into a KM macro, search for the desired elements and rename the document with these.
