I have a large set of macros that use actions similar to this. Is there any way to make "Adobe Illustrator CC 2015" a variable so it can be updated globally?

To get round this you can use two actions as shown here:

Set a global variable to the name of the app that will be changing over time. I suggest you put this and other similar actions in a single macro that you run every time an app name changes.
