Keyboard Maestro 8.2.4 “OneNote quicknote” Macro
I've seen a few other scripts for imitating OneNote's "QuickNote" in MacOS (which doesn't have this Windows-only feature). My version works a bit better for me by running OneNote but rather than waiting for it to open up, allowing immediate input in a floating HTML window. Once you finish typing the note, clicking OK looks for the Quicknotes notebook (image recognition), clicks it, creates a new Page, and copies the two fields in.
